Aloo Broccoli Recipe (Potato with Broccoli)

Aloo broccoli sabzi is a keeper for sure. Broccoli is known as a miracle vegetable. It packs a nutritional punch. It is also known as green gobi. I have mentioned the health benefits of broccoli in 'healthy bytes' below. If you cook potato broccoli the way given below, you will find this dry curry quite tasty.
Recipe of aloo broccoli sabzi
1 medium broccoli (hari gobhi) - cut into florets
3 medium aloo (potatoes) - peeled and cubed
2 tomatoes- pureed
1/2 tsp cumin seeds
A pinch of hing (asafoetida)
Salt to taste
1/2 tsp turmeric powder
1/2 tsp red chilli powder
3/4 tsp coriander powder
1 1/2 tbsp oil

1. Heat 1 tbsp oil in a pan and add cumin seeds. When they turn darker, add hing.
2. Add aloo and broccoli pieces. Add salt and all the spices and mix well. Turn the heat to low and cover the pan with a lid. Stir occasionally.
3. While it's cooking, in a separate pan, heat 1/2 tbsp oil and add tomato puree. Cook till it leaves oil.
4. When potatoes turn tender, add this cooked tomato puree and mix well. Cook for 2 more minutes. Then turn off the heat. Serve aloo broccoli with roti or paratha.
